Same old thing happening here. Surprisingly the "resolutionists" haven't hit the gym that hard yet. Yesterday I had my choice of treadmills -- typically at this time of year I'm lucky to find any available. They did open a new 24 in the area, so I suspect that one is jam-packed.

Fresh Tuna Tacos

1/3 cup lowfat sour cream
1/4 cup chopped red onion
3 tablespoons chopped cilantro
1 teaspoon minced canned chipotle chilies (in the specialty ethnic foods sections)
1 8-ounce ahi tuna steak, cut into 3/4-inch pieces
1 tablespoon taco seasoning mix
1 tablespoon olive oil
4 whole wheat tortillas

Mix first 4 ingredients in small bowl. Place tuna in medium bowl; sprinkle with taco seasoning. Heat oil in heavy medium skillet over medium-high heat. Add tuna; sauté to desired doneness, about 3 minutes for medium. Reduce heat to medium-low. Stir in sour cream mixture. Cook just until heated through, stirring frequently, about 2 minutes (do not boil).

Heat tortillas in microwave 20 seconds; fill shells with tuna mixture.

*Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores and some supermarkets.

Some tips we have learned after making these a couple of times:

- Add toppings: chopped tomato, cheese, avocado, more chopped cilantro, etc. for taco filling
- Add ½ the package of taco seasoning to season tuna and then add the remaining to the sour cream mixture.
