Donna's Cool as a Cucumber Salad

Cucumbers have beeen on sale, so I'm guessing they're either in season, or rapidly approaching in season. At 55 cents each, it makes for a good start to a cheap meal! I just pair this salad with my favorite protein and I'm good to go.

So to meet my cucumber cravings... I have concockted this mixture, based losely on something my Grandmother used to make, but she used fully leaded sour cream. I feel about sour cream how Homer Simpson feels about beer and donuts. ,br>
Anyway, here's the recipe

Donna's Cream "Cool as a Cucumber" Salad

4 Cucumbers, peeled and sliced, then diced in quarters
24 Grape Tomatoes, washed and dried
1/4 C. Green Onion (Scallions), chopped
1/2 C. Fage Yogurt
Provencal Seasoning (or your favorite -- Dill works well too) to taste
4 T. Cider Vinegar
Sea Salt
White Pepper
1 packet of sweetener (spelnda, pure via, or your favorite)

Combine all ingredients. You can serve immediately, but I find it tastes better after it sets for a night.

Just a note... careful with the sea salt. It needs time to dissolve in the dressing -- so it's easy to over-salt if you taste it too quickly after adding. Trust me... I've done it. :)
