Blueberry Greek Yogurt Banana Bread by Daily Garnish

I'm always out for recipes that have healthier ingredient alternatives. Seems like whenever I try to make a substitution, more often than not, the recipe fails. Every once in a while I find a blog full of edible inspiration... Emily at Daily Garnish recently published this recipe of her own creation.
It is fan-freakin'-tabulous... and buttah free, to boot!
So I went to Panera Bread the other day and enjoyed their Fuji Apple Chicken salad. I have to say it was yummy. But after I went to the website and read the nutritional content I was less than pleased. A 500+ Calorie salad and a ton of ingredient names in the dressing I can't even pronounce. Although one that I can pronounce is Propelyn Glycol, which is found in lighter fluid. Uh, yeah... I don't think so.
So I took it upon myself to make a similar salad.
Romain Lettuce (they used mixed Spring Greens)
Pecans (just a few per salad)
Dried Apple Chips
Gorgonzola Cheese (just enough)
Rotisserie Chicken (Breast only No Skin)
Donna's Fake Fuji Apple Dressing (6 servings) 2 T. Olive Oil 1 T. White Balsamic Vinegar 1 T. Apple Cider Vinegar 1 T. Garlic Powder 1 T. Onion Powder 1 1/2 t. Dijon Mustard 3 T. Organic Frozen Applejuice Concentrate
Theirs: 80 Calories 6 g. Fat and full of processed crud.

I'm alive, just been real busy and haven't had much time to write anything meaningful, or even meaningless in my blog. LOL
On the post-op front things have been going well, albeit slow. That's okay though. My measurements are showing progress and that's what's important. Work has been crazy-nuts, but I am making my way through. Next week I'm off to Salt Lake City for training. I'm excited because I'm going to try skiing for the first time while I am there! Here are some more progress pics. I'm 11 1/2 weeks out today and down 55 lbs. I am, however, going to start to weigh monthly. I think it will be healthier for me mentally.
